Pie with cottage cheese and blueberries (oven, slow cooker)

Ingredients

dough:
150 g butter or margarine
150 g sugar
2 tsp vanilla sugar
1 egg
200-250 g flour
2 tsp baking powder (or 1 teaspoon of slaked soda)
filling:
600 g cottage cheese (1-20%)
4 eggs
150 g sugar
100 g starch (potato)
300 g blueberries (or currants, blueberries, lingonberries, strawberries, etc.)
icing sugar for dusting

Cooking method

  • Grind the butter with sugar and vanilla sugar.
  • Add egg, stir.
  • Add baking powder and flour, knead a not very tough dough.
  • Grease the mold with oil.
  • Put out the dough, make the sides.
  • Prepare the filling.
  • Separate the whites from the yolks.
  • Grind the yolks with sugar.
  • Add cottage cheese, mix well (if the cottage cheese is coarse, rub it through a sieve).
  • Add starch, mix.
  • Beat the whites with a pinch of salt.
  • Add proteins to the curd mass, mix gently (not with a mixer).
  • Put the curd mass on the dough, flatten.
  • Leave a few blueberries for decoration.
  • Add 1 tbsp to the rest of the blueberries. l. sugar, beat in a blender (or mix well).
  • Put blueberries on the curd mass (you can make patterns with a fork). Put the pie in an oven preheated to 180 degrees, bake for an hour.
  • If the top of the cake starts to burn, cover it with foil.
  • Sprinkle the finished cake with icing sugar and garnish with blueberries.
  • Cool the pie completely and cut into portions.
  • My changes: I took 220 grams of flour, did not melt the margarine, but simply kneaded it with a fork, and then rubbed it with sugar with the back of a spoon. Instead of 600 grams of cottage cheese, I took POLAR curd cream - 500 gr.
  • I put a multi-rug from the Firebird on the bottom. She laid out the dough and kneaded it with her hands along the bottom of the saucepan, driving into the walls and forming the sides.
  • I laid out the curd filling on top, and sprinkled it heavily with previously thawed and drained blueberries. Baking 65 + 30 min.
  • She took it out and let it cool on a wire rack. Sprinkled with powdered sugar and grated chocolate.
  • BON APPETIT!!!

Nice pie, very much! After the first unsuccessful experience in my fast car, I just can't dare to repeat it.

Cubic, and what didn't work out? It's just an accident ... The cartoon is a big smart girl ...

I don't have a cartoon - I have a multicooker pressure cooker (Unit). I baked charlotte, got a tall, beautiful but tasteless biscuit, there was some kind of boiled flavor in it. Probably, this is a feature of the Units, because I don't see something that they actively bake in.

So I think dishes like cheesecakes, curds should turn out fine in my pan. I look closely at the recipes for now, "tune in".

I wrote down this recipe, bake it in the oven (just in case)

Gashenka, can I kiss you on both cheeks? Tasty, gentle, moderately sweet and useful for growing young hackers who cannot be driven away from the computer, but you can at least correct their vision with blueberries. The beauty! Here, help yourself

The base is not as airy as on the sample, since I put only 1 tsp of baking powder. Baked in the oven for 1 hour, temperature 180 degrees.
I will bake many, many more times. Thank you .
Gasha
Agata, great photo with a nice cake !!! I am very glad that the pie came to taste !!!

Tell me, if there is no oven, but there is a PANASONIC SR-TM 18 Multicooker. How can you bake this cake in it? Can I step by step? What's the bottom and top of the pie? Will it be baked in it?
Gasha
kamelot, mamadaragaya !!! Why copy the whole long recipe? And, excuse me, but your question is not clear ... I just baked in such a cartoon And painted everything - how and what ... It is baked great ... The bottom is ruddy, the top view is in the photo

You do not write about any multicooker. Here are your words: "Put the cake in an oven preheated to 180 degrees, bake for an hour." I asked how to do it in a Panasonic multicooker, on which program and how to put it in a roll or on parchment, etc.

kamelot, of course I'm wildly sorry for getting in, but I'm sorry what it means you do not write about any multicooker ? Here are the words Gashi from her first post:

I put a multi-rug from the Firebird on the bottom. She laid out the dough and kneaded it with her hands along the bottom of the saucepan, driving into the walls and forming the sides.

I laid out the curd filling on top, and sprinkled it heavily with previously thawed and drained blueberries. Baking 65 + 30 min.

And what kind of multicooker has Gashi, indicated in her signature (under the avatar) ...

Baking 65 + 30 min. - What is it like? Do I set 65 minutes and then another 30 minutes on the baking program a second time? If there is no rug from Poultry Fever in the country, but a lot of fresh blueberries, then maybe you can put the parchment on the bottom?

Yes, you bake for 65 minutes, and then check the cake with a wooden stick to see if the dough is ready. (Maybe in your case it will take less time, everyone bakes multi in different ways ...) If the cake is not ready yet, then put the cartoon on the Baking again, setting from 10 to 30 minutes.
If there is no rug from Poultry Fever in the country, but a lot of fresh blueberries, then maybe you can put the parchment on the bottom?
You can ... and you can also cut two long wide stripes out of parchment and put them under the circle of parchment, then it will be convenient to pull out the pie for these strips. Here, look at the ribbons ... sometimes there are enough of them, and you don't need to cut the circle to the bottom:

Excuse me. I'm in the process. I put PANASONIC SR-TM 18. in a multicooker for 60 minutes, then for 30 minutes, and so it is not baked. The pale yellow dough remains on top. Not like in your photo. Not given. Nothing remains on the match when pierced. Should I bake it even further until the crust on top darkens? Or so pale and leave?
Gasha
In a slow cooker, the top of the pies is not fried, and remains light. Usually we turn the pies over, so that the top and bottom are reversed, but in this case, the brownness can be masked with blueberries and powdered sugar.I also have a light yellow, unburned ...
kamelot
Yes Yes. I turned the cottage cheese casserole so that it was browned on both sides. How to disguise? Smear the entire top on the black ink?
I also wanted to ask. This recipe with blueberry shortcrust pastry, how do you think it can turn out in a cartoon?
BLUEBERRY SAND PIE
Preparation
Prepare sweet chopped dough.
For sweet chopped dough.
Sift flour and salt with a slide on the table or into the bowl of a food processor.
Add sugar.
Top with diced chilled butter.
Chop the flour and butter in a food processor until finely crumbled.
Add the yolks one at a time, stirring the dough each time (you can add a whole egg or cold water instead of the yolks).
You should get a thick, crumbly mixture (you do not need to achieve uniformity).
The dough is easy to mold.
* If necessary, if the dough is too crumbly, you can add a little sour cream or 1 more yolk.
Put the finished dough into a ball, wrap it in plastic wrap and put it in the refrigerator for ~ 1 hour.
* Can be put in the freezer for 15-20 minutes. If it gets very cold, let it sit a little at room temperature.

Take the dough out of the refrigerator, roll it out a little and lay out the bottom and sides of the cake tin, forming the sides.

Cover the dough with a parchment circle and add dry beans. I didn't have beans or peas, so I put a saucepan with water on top, but the dough remained a little damp under the saucepan and I put it in the oven for another 5 minutes without a saucepan.
Put the mold with the dough in an oven heated to ~ 190-200 ° C and bake the dough crust for ~ 10-12 minutes.

Sort out blueberries, wash and dry.
Mix half of blueberries with 3 tablespoons of sugar.
Put the blueberries mixed with sugar on the bottom of the baked crust, put the remaining blueberries on top and sprinkle the berries with 1 more tablespoon of sugar.

Prepare sour cream and egg filling.
Put eggs, sour cream, sugar, vanilla sugar in a bowl, add starch and stir well with a whisk until smooth.

Pour the cake with sour cream and egg filling.

Bake in the oven for ~ 15-20 minutes at a temperature of ~ 200 ° C.

Bon appetit and successful pastries!

Although the recipe was long, it turned out to be VERY SIMPLE and awesomely delicious !!!!
kamelot
Are you also pale from the sides? Above the parchment is also pale, or is the bottom on the parchment browned?
Gasha
kamelot, I did not smear anything, I initially distributed the blueberries evenly over the entire top of the dough ... You can see what happened in the photo. On the sides, the pie is light yellow, which can also be seen in the photo. The bottom is ruddy. In the recipe you have given, there is a sour cream and egg filling, because of it I would not recommend baking this pie in a cartoon, since the top will not be baked, but there will be something like an omelet. We have on the site common topic for similar questions. And in topics like this, this particular recipe is discussed. It's convenient, you see ...
kamelot
Thank you. On the sides I also have it browned. I smeared it afterwards, because I didn't know. But it also worked out well. Have not tasted yet :) I understood about the discussion. But if it's not difficult, tell me, is it possible to try this recipe in a Kenwood bread maker? I really like sand cakes ...
Gasha
I didn't bake anything like that in a bread maker, why? In a slow cooker, shortcrust pastry is great
kamelot
Maybe there is a recipe for shortcrust pastry with blueberries without sour cream filling?
Gasha
There is, of course, for example, this one ... I like this cake, but if you want something else, you can always search for it. And in this thread, let's talk about this recipe, okay?
kamelot
Have tried it. It tastes like a casserole. I will definitely change the recipe. It can be left for winter. And for the summer, you can put twice as much blueberries (since we have buckets for them) and half as much cottage cheese. And I wanted more sugar in the curd.

And thank you. The taste, of course, is different for everyone. Who and snails are worms. And I'm okay with casseroles, although the recipe is easier and faster there. But it’s for sure that blueberries are needed more than once every two at least.Everyone who tasted, and there were 8 of us at the dacha, said that there were not enough blueberries and that it was good for a cottage cheese casserole. The main thing for me is that it does not flow through the tasty dough ... For some reason, I rubbed the cake through a sieve, then I realized that it was possible to beat perfectly with a Bosch blender with a meat attachment. Beat her blueberries too.
kamelot
I still want to write a comparison of two cakes. With cottage cheese, as I wrote, it seemed to us a casserole. And from the sand with blueberries, which I baked yesterday in the Soviet Miracle Oven (like a frying pan with a lid, where the heater is on top), everyone was delighted with the wild and only now they ask to repeat it. I began to compare the recipes. It seems that the dough is the same shortbread both here and there. But in the shortbread recipe, it is quenched with soda or baking powder, and butter, not margarine. Separately pour the yolks, etc. The dough in the shortbread recipe is much tastier. My question is this. Is it possible to use the recipe for shortcrust pastry with sour cream filling instead of the recipe for curd cake dough, leaving the recipe for curd filling the same?

Hello. Thanks for the recipe. My cartoon is in the country, there is no oven at home, but I really wanted this cake) so I decided to bake it in KhP. Of course, I took out the stirrer. I put the dough on the bottom and with sides about 5 cm along the walls. The filling is not quite according to the recipe - the berries are mixed with cottage cheese. I took it out neatly. Indeed, strips of parchment would be useful.
Baked for 1 h. 10 min. and the pie also stood in the switched off HP. I could have baked less, I was afraid it would disintegrate.
I liked it. The dough is very tasty, crumbly. Soft filling. Not very sweet, but in my opinion it's good.
