Coffee and honey cookies

Ingredients

225 gr butter
450 g flour
3 tsp baking powder
a pinch of salt
200 g sugar
1 bag of vanilla sugar
2 eggs
100 grams of raisins
1 tsp instant coffee
1 tbsp. l. hot water
liquid honey

Cooking method

  • Mix flour with baking powder. Grind the butter with flour (I did this in a food processor with a hook) and salt until crumbled. Add sugar and add lightly beaten eggs. Dissolve coffee in hot water and add to the dough. The dough should be soft, but not sticky. Then combine the raisins with the dough. Make 16 balls, flatten them slightly and place a baking sheet lined with baking paper at long intervals (they will double when baking). In the center of each ball, make a depression (with your finger or a bottle cork) and pour 1 coffee spoon of honey there. Honey should not be heaped, otherwise it will flow out and burn during baking. Top with honey can be sprinkled with ground nuts or coconut.

  • Bake cookies at 200 ° (convection 180 °) for about 10-15 minutes.
