Ingredients

Wheat flour 360 g
Chestnut flour 120 g
or 30% by weight of wheat flour
Curd serum 50 ml
Old kefir 200 ml
Salt 1.3 tsp
Chestnut honey 2 tbsp. l.
Butter 35 g
Yeast 1.7 tsp

Cooking method

  • There is practically no gluten in chestnut flour. This means that when baking bread from it, binders such as an egg must be added to the dough. To bake bread, chestnut flour should be mixed with wheat flour, spelled in smaller quantities than the main one, about 1/4 or 1/3 of the flour mass.
  • Knead the dough in a bread maker, Dough mode until the dough is completely ready.
  • Forming the dough: roll the dough into a layer equal to the size of the mold.
  • We roll the dough into a roll, as when forming loaves, without twisting the roll too much.
  • We put the dough in a mold and put it in the oven at 30 * C.
  • With an increase in the dough piece by 2-2.5 times, turn on the heating of the oven to 180 * C.
  • We bake bread until tender. After browning the crust, the temperature can be reduced to 170-165 * C.
  • The dough rose well in the mold and the baked goods went well.
  • The output of bread is 850 grams.

Very pleasant to the taste gray bread, slightly "cocoa color" in color, soft crumb and crust, does not stale for a long time.
I bake bread with chestnut flour for the second time in a row, but the taste of the bread is not tired.
Good for all occasions - like table bread and tea with sweets on top.

I bought a ready-made mixture of Nastyusha with chestnut flour in Platypus. It is called "Galskaya". Only water and yeast need to be added to it.
The aroma from chestnut flour is amazing, it reminds of cinnamon in some way, but very tasty, the bread is airy and very fragrant.
So you can probably fork out for chestnut flour;) it is in the same place, in Utkonos, sold for 500 rubles. for 500g.
