Ingredients

For the test:
Wheat flour
(grind with margarine)
5 tbsp.
Kefir 0,5 l
Butter or margarine
(I had margarine)
300 g
Yolk 1 PC.
Baking powder sachet
For filling:
Adyghe cheese
(or country cottage cheese)
500 g
Suluguni 500 g
Egg 1 PC.

Cooking method

  • Glass 200 g
  • Knead the dough, divide into 3 or 4 equal parts. Roll up the balls. Do the same with the filling.
  • Next: knead the dough bun until the flat cake, so that its edges come together, hugging the filling ball, which you put in the center of the flat cake. Then, pinching the edges, you begin to smoothly turn this large block into a cake (the filling is evenly distributed throughout the khachapuri inside).
  • That is, do not use the rolling pin !!! That is why the dough is surprisingly soft.
  • The cake should not rise.
  • In the oven, it is cooked for about half an hour, you can safely look into it and check the degree of roastiness without fear that it will fall off.
  • Brush with beaten egg 3 minutes until tender.
  • Pulling it out of the pan (it does not stick, but for reassurance, you can grease the form with oil beforehand), grease it well with oil on top and cover with a towel.
  • Khachapuri should be soft, so we create a bath for them under a towel. Preparing quickly.
  • If the required cheeses are not available, then instead of the Adyghe cheese, you can put cottage cheese, and replace the suluguni with mozzarella, but salt it all well.

Note

And a friend from Abkhazia "gave" me this recipe. Khachapuri is excellent! I also want to try to knead in a bread maker now.

I kneaded it with my hands, since the whole trick, as I understood it, is to grind flour with margarine into flakes (as in shortbread dough), and this cannot be done in the oven. The filling went "homemade cheese" + mozzarella + salt. THANK YOU !!!!!!!!!
