peppercorns
Bay leaf
Bulgarian pepper 50g.

Cooking method

  • She poured all this with hot water (boiling water) in the amount of 1.5 liters, salted to taste, sealed it tightly with foil and put the bucket in the bread maker.
  • After 2 hours, she came (she also did not stand for hours, came up when I remembered - all the same, the bucket in the bread maker cools slowly, so the necessary "languor" occurs), took out the bucket, let the bread maker cool down a little so that a new cycle could be started, and put the bucket back "bake" and "warm up".
  • Next time you can even be "late" by the end of the cycle. Cabbage soup can sweat a little longer.
  • The result is very beautiful, as it has a special brownish, melted color, the broth is transparent, the vegetables are not boiled, the pieces keep their shape perfectly. And it is very tasty - all vegetables demonstrate such unity and cohesion ... Those who have tried it will understand.
  • Notes:
  • 1. It is necessary to take a little spices, because they give themselves very strongly during such a long preparation.
  • 2. Aromatic ingredients can, in principle, be added only before the second heating, by slightly lifting the foil lid.
  • 3. The foil should fit snugly around the edges of the bucket and not block the gap between the bucket and the walls of the bread machine, so as not to interfere with the outflow of air.
  • 4. Short heating is focused on bringing the brew to a boil. They do not need to boil. Firstly, this is the evaporation of excess moisture - I don't think the stove will like it. And secondly, the boil turns the vegetables into puree.
  • 5. Some will say that you cannot put raw vegetables in an acidic environment. I hasten to answer this virtual objection: in 5 hours of cooking, any vegetables will become soft in any environment.
  • 6. Someone else will say that this is an inconvenient way - you cannot completely rely on the stove and come to a finished table. So that the table was also set, and a bread maker in a white apron and a headdress served at the table. Yes, attention is required. Once. But this is more than compensated by the fact that initially vegetables and meat are quickly cut and thrown without following the sequence and any stewing-frying. That is, the cooking time is 5-10 minutes at the beginning (cleaning-cutting) and 10-15 minutes in the middle (drink tea until the exposed bucket does not interfere with the cooling of the heating element of the stove).
  • Yes, I almost forgot. Finely chopped garlic, a spoonful of sour cream and maybe a little more fresh dill are good for this dish.
  • And a slice of fresh warm brown bread with a crispy crust ... But for bread - that's in another section. Cook the cabbage soup - pour it into a saucepan, put it under a heating pad while it languishes - it won't hurt. And we bake bread.
  • And to the table.
  • Bon Appetit.

  • Note

My favorite Delonghi bread maker helped me today to cook delicious cabbage soup like from a Russian stove.
What is the difference between daily and non-daily cabbage soup? Not that they are eaten the next day, but that they are languishing for many hours in a very warm or slightly hot oven, so that all the ingredients are saturated with the taste and aroma of each other. Maybe there is an opportunity to set the temperature below 100 degrees in modern electric stoves, but I have a gas stove, and how not to regulate it, but it will be hot in the oven, so my first experiment on cooking cabbage soup turned out to be very troublesome - I ran and tried to open doors to moderate the heat.Considering that cabbage soup is cooked for about 5 hours, I was worn out and decided that the game was not worth the candle. Alas. When I start a job somewhere in the vastness of my homeland, then ...
But my bread maker came to my aid.
What is the difference between the Delonghi bread machine? The fact that it is programmed for any duration of standard operations for a time from 0 to 99 minutes. That is, you can turn off some operations from the cycle, or you can extend something to more than an hour and a half.
I set the mode when heating ("baking") lasts 20 minutes, and heating after "baking" 99 minutes.
I threw in the bucket the ingredients that I wanted to see in the cabbage soup. Personal preferences play a role here.

A glass of cold vodka, I think, will also be just right. Because the people say: "Don't drink for a year, but drink with cabbage soup!"

    Thank you, Marfushka!
From a purely theoretical point of view, I got acquainted with your method of cooking cabbage soup in a bread machine. By the way, there is a branch here called "what else can be done in a bread maker besides bread" - there people stew meat, something else ...
The idea itself is sooooo cute. BUT! Firstly, the overwhelming majority of owners of bread makers do not program their assistants (ha! They were left without cabbage soup!), And secondly, the overwhelming majority of buckets (in our version, a spout) are much smaller in volume than ours, Delonge. They can be compared, if I am not mistaken, from Mulka with 2 mixers, and from Panas .... The rest are liter They can also boil away and the heating element can be poured ... And he will die from contact with water In the service department, when they find out about the reason breakdowns, make such eyes vooooot and take a picture of you as a keepsake
But as an emergency, extreme option, which was forced by certain circumstances, I will definitely remember this method of cooking.
And according to your recipe, I'll go to cook in a slow cooker! Say 5 hours to simmer without letting it boil? Yes please! Easy! In 10 minutes I will crush everything (where would I buy a turnip now?) And on "Stew" for exactly 5 hours!
