Wheat-rye cakes with rice

Ingredients

Wheat flour 260 g
Rye flour 200 g
boiled rice
(mixture of wild, golden and brown rice)
190 g
Kefir (old curdled milk) 150 ml
Salt 1.3 tsp
Sugar 2 tbsp. l.
Vegetable oil 3 tbsp. l.
Yeast 1.5 tsp.
Kvass wort 1 tbsp. l.
Sour apple (grated) 100 g
Spice mix (optional) 1 tbsp. l.
Chicory (for dark colors) 1 tbsp. l.
You can add raisins or other dry berries,
sunflower seeds

Cooking method

  • We put all the products in the bucket of the bread machine, turn on the Dough mode, and bring it to the end. We make the dough softer than the usual kolobok.
  • Put the finished dough on the table and form cakes of different shapes from it with a thickness not exceeding 1 cm. On top of the cake we make cuts in the form of a lattice.
  • We spread the cakes on a baking sheet and put them in the oven for proofing at 30 * C until they increase in size by 2-2.5 times.
  • We bake in the oven at 180 * C until tender.

Note

I continue to put in the dough those products that are at home and in the refrigerator at the moment. It's always interesting to see what happens after baking, in the finished product.
That's what I did.
Delicious, airy cakes. The presence of rice in the finished product is not felt at all.
Bread products from the category where baked goods in this form are eaten much faster than in the form of a loaf of bread.
In this version, I used only a mixture of spices for bread. Next time I'll add dried fruit, which will give the cakes a sweet and sour taste. And now I will definitely bake such cakes.

Instead of rice, I added cake from oatmeal jelly. And malt instead of leavened wort. From spices - ground coriander. It turned out delicious!
