Muffins with dried cherries

Ingredients

1 cup - 240 ml.
1 cup plain yogurt (I took kefir)
1 cup dried cherries
1/2 cup (113 g) butter, room temperature
3/4 cup sugar (I always reduce it a little)
2 eggs at room temperature
1.5 tbsp. l. vanilla sugar or 1 tsp. vanilla extract
1 3/4 cups flour (that's ~ 230 gr.)
1 pack of caramel pudding (40g) (optional)
2 tsp baking powder
1 tsp soda
a pinch of salt

Cooking method

  • 1. In a cup combine cherries and yogurt. Close and leave for at least 30 minutes.
  • 2. Turn the oven on at 180 C.
  • 3. Beat butter and sugar with a mixer until the mixture becomes airy and turns white.
  • 4. Add eggs, one at a time, beat well after each addition. Add vanillin and cherry with yoghurt, mix well.
  • 5. In another cup, sift together: flour, baking powder, baking soda and salt. Pour into the cherry mixture in three steps. It is very important - do not stir for too long, otherwise the cupcakes will not rise.
  • 6. Fill the prepared molds to 2/3 of the height.
  • For even baking, do not fill one of the cups with the dough, but add half of the hot water. Or put any dish with water in the oven. The moisture helps the cake rise and bake better. This rule applies to all muffins in general, not only to these. Bake for about 20 minutes, or until the stick is dry when pierced. Cool on a wire rack.

The recipe is most likely American, they use both soda and baking powder in almost all recipes. And this is true, because soda is extinguished immediately in the process of interacting with an acidic medium (in this recipe it is kefir), and baking powder begins to act when the temperature rises (i.e., when baking).

I baked muffins from one batch, the first went into the oven right away, they didn't even stand a single gram - it was already heated (the bread was baked before), very fluffy tender turned out, but they do not hold the mold, and the second run turns out the dough stood while the first were baked - and an excellent result turned out. Maybe just when soda, baking powder and starch in the dough meet, they must first make friends with each other

I baked muffins. The dough is strictly according to the recipe, except for the cherries. Did not have. I added orange zest and some orange juice. Great recipe! I will definitely try with cherries.
