Muffins with chocolate and berries

Ingredients

Dough:
Flour 320 g
Sugar 180 g
Baking powder 1 tbsp. l. (9 g)
Vanilla sugar 1 tsp (5 g)
Chopped white chocolate
(dark chocolate can also be used)
150 g
Eggs 2 pcs
Butter, melted and chilled 50 g
Milk 250 ml
Any berries
(raspberries, blueberries, blackberries, strawberries)
100 g

Cooking method

  • Combine all dry ingredients in a bowl.
  • Mix all liquid ingredients together.
  • Then mix liquid and dry ingredients. Dry to liquid in parts !!! Stir very gently and gently and no more than 10-15 seconds. The dough should be lumpy.
  • Finally add berries, chocolate and stir gently. I had blueberries. You can also use frozen berries.
  • Bake in a preheated oven at 180aboutC, about 20-25 minutes until golden brown.
  • I take any berries: currants, cherries, gooseberries, blueberries, raspberries, etc. I take, without weighing, such a good portion ... 300-400 grams ...

Note

My family just adores these muffins ... I bake them regularly once a week both in winter and summer ... With white chocolate and dark chocolate, with fresh berries and with frozen ones. They are simply incomparable.

Gasha, what do you need to interfere with? Handles?
Gasha
Tanya, well, put a spoon in the handles ... Any muffins in general are always better to stir with a spoon with movements from the bottom up. Fast.

What's the matter with you today? Can you stars ??? !!!

A question arose: should you throw frozen berries like this or defrost them?

I answer as if in spirit !!! I did it in different ways ... If there was enough time, I defrost it, then threw it back onto a strainer to drain the juice. But if there was no time, she would shake off the ice from the berries and splash into the dough without defrosting. The muffins still turned out wonderful ...

How we got there with Omelka today the stars were formed - I don't know. Only I was firmly convinced that in my house I only had no chocolate. It turned out that there was no white one. And from the dark ones there is no real chocolate, and in the storehouse one small chocolate bar dangled, and that one with nuts. Nobody confesses, and the dachshund Zyama is generally silent. There are no options here, apparently Zyama ate all the chocolate, although the paws are short, they reach the ground, which means they will reach the upper kitchen shelf.
Gashik, I did just that, banged the whole package of frozen raspberries, she was born and grew up, apparently, somewhere in Norilsk and did not see the hot sun. To put it mildly - sour. That's why I poured powdered sugar a centimeter in height. The section clearly shows raspberry stains and chocolate with nuts.
It was not possible to achieve a golden color, raspberries with chocolate gave a mysterious shade

Gashenka, and berries (cherries) with seeds, if frozen plopped?
Gasha
Tanya, well, vaasche, cherries are already pitted in any baked goods! Well, hunt you then spit it out - try it ... then tell me how it is ...

GashHow many muffins are obtained from this number of ingredients approximately? And now there are only two of us, but my husband, besides, is not allowed fatty pastries. And I may not, but I really want to, therefore, it is possible.

Panevg1943, Lizun, I have three silicone layers of 6 muffins. I put it - a little more than half. In total - 18 pieces. But, keep in mind that I put a lot of berries. And so - maybe it will turn out less, especially since my forms are low ...

Lizok, well, I'm sorry, I didn't see your question right away ...

I will make one layer (I will manage with 6 pieces myself). Now you need to calculate everything based on the amount of flour in 107 grams.

Recipe Super! I specially marked the time for making - 20 minutes, and for 10 minutes I rubbed the chocolate with a new chopper and laid it out in the molds for 5 minutes! When baked - the aroma was !!! At least I breathed! I'm bringing you a thank you!

Py. sy. Baked with black currants, frozen (washed it only from the snow with water and dried it with a napkin). I regretted chocolate - I put 50g

A very impressive recipe !! I have a question, Gasha, and when should I put chocolate, along with dry ingredients?
Gasha
Chocolate always intervenes in baked goods last. Very fast.

Gasha, of course it is impossible to redo all your recipes, but there is something to strive for
On Friday I came home from work very tired, I wanted to pamper myself with something tasty, but since I was still tired, I dreamed that someone would cook it for me. BUT, when I looked again at the recipe for these muffins, I realized that even in this state, they can be made easily. Half an hour later I was saved
Muffins with chocolate and berries
I threw all the leftovers that were found in the house: some white drops, half a bar of dark chocolate, a handful of raspberries and cherries that remained from last winter's stocks, I also found blueberries in my freezer
I can advise everyone who is going to bake according to this recipe not to do less than the author's. From this amount, I got as many as 24 pieces, thanks to which they remained on the second day. And on the second day I liked it even more: they turned out to be crispy.
Panevg1943
Gash, I still contrived and baked muffins: I managed to do it while my husband was talking to a neighbor. What does the recipe "hot in the heat" mean in 25 minutes. My husband liked it, but said it was sweet. I generously put in aerated chocolate and cherries. I counted the recipe for 107 grams of flour and still got 6 small and 1 medium muffins.

Thank you for the recipe !!!
Plyushkin's glitches
so, even though there is no one here for a long time, I will try to ask a few questions.
the muffins were made following the recipe, but the dough came out slightly uncooked (to put it mildly) because baking powder was not put in in a hurry.
Now the question is - why are such precautions necessary when kneading the dough? you write - stir gently, gently, stir slightly ..
what will happen if I just impudently and unceremoniously mix the whole thing with a whisk or a mixer (well, I mix liquid and dry separately, and then everything with a mixer)? baking powder last and mustache?
Gasha
To put it mildly - the dough will turn out to be unbaked and truncated!
Plyushkin's glitches
well, I think it was not baked due to the lack of baking powder ..
Actually, I rarely bake, which is probably why I ask stupid questions ..
I just don't see the connection between impermanence and lingering.
really if I mix it properly, it will not bake?
for what reason?
Gasha
Probably, precisely because you rarely bake, you do not see the connection ... The dough is different, and it is kneaded in different ways. The muffin dough, so that they rise well and are fluffy, you need to knead quickly with a spoon with movements from the bottom up, even if lumps remain - it's not scary, they will then disperse ...

Plyushkin's glitches, the muffin dough is kneaded so carefully so as not to develop gluten too much, just enough so that the cap rises, but the product itself remains tender and fluffy, airy.

if you do as you suggest, the muffins will turn out to be tough, with chewy rubber crumb .. experiment and see the difference

I mix the muffin dough with a mixer, at the first speed of 5 (the whisk rotates at about the speed of a spoon), for 1 minute.
Plyushkin's glitches
Thanks for answering,
I generally bake only one pie (well, there is a recipe for dummies like me - I mixed everything and poured it into a mold) and I think I'll try something else.

so if you don't stir (I mean, when you combine liquid with dry), if you don't stir it properly, it won't stir in principle ..

I'll have to try .. only I'll take half of everything, otherwise it turned out to be too many (I only have 12 molds)
Sonia's mom
Gashenka, thank you very much for the amazing muffins! The dough is so tender that you can see air bubbles on the sides! I have with blueberries and chocolate droplets. I reduced sugar to 150g and chocolate to 100g, which is just perfect for me. Yes, and baked for 40-45 minutes, after 25 minutes I added the temperature to 200 degrees. Well, this, you see, is the property of my oven. Thanks again!

moby, Gasha is not present, away. But, if you really need it, then there is her mobile. Throw? or have another week with muffins ...
Omela
moby , I did everything according to the recipe. Happened - . You can do it for the first time, as in the recipe, if you think the baking powder is too much, reduce it. Good luck!
moby
IRR, Thanks for attention . But, really, not worth it. I will not bother a person about such a trifle.
Omela, thank you. Now I'm sure I'll make it according to the recipe in the week and I'll decide.
Gasha
moby, the original baking powder recipe contains exactly that amount ... Muffins are wonderful
