Eggplant omelet.

Ingredients:

Eggplant 1 small
Eggs 2 pcs.
Tomatoes 1 PC.
Leek 1 PC.
Dill
Salt
Pepper
Olive oil

Cooking method

  • Peel the eggplant, cut into 1x1cm cubes. 4 parts tomato. Chop the leek too.
  • Salt the eggplant and let stand. Drain the liquid.
  • Lightly tire everything in a frying pan with olive oil.
  • Pour over beaten eggs, sprinkle with dill.
