Vegetable broth for aspic

Ingredients

Vegetable mixture (onions, carrots, celery and others) 150 grams
Water 400-500 ml.
Bay leaf 1 PC.
Carnation 1 bud
Black peppercorns 1 tsp
Thyme 1 small twig or 1/2 tsp dried
Salt
Strained vegetable broth 200 ml.
Gelatin
Lemon 0.5 pcs.
Lime 0.5 pcs.

Cooking method

  • It often happens that the prepared broth for pouring is cloudy from cooking fish, meat and other things, and has a completely unpleasant taste and smell.
  • There are different situations when you need to pour the prepared product with broth so that the broth is transparent and tasty.
  • For example, as in the photo - Veal Brains with Peas, Corn and Jelly
  • Put vegetables, spices in a saucepan, fill with water and cook for 30 minutes over low heat.
  • We filter the broth.
  • We take 200 ml from the broth. and place in a saucepan.
  • Squeeze the lemon and lime juice into the broth. Put the lemon and lime peels in the broth too.
  • Bring the broth to a boil and simmer for a few minutes.
  • Cool the broth until warm with citrus fruits.
  • Dissolve gelatin in warm broth.
  • Jellied broth is ready!
  • Now you can pour prepared fish, different vegetables, tongue, meat and much more with this broth!
  • We get a very tasty, aromatic, unobtrusive in taste, transparent vegetable broth for aspic!
  • Bon appetit, everyone!

Don't do that, people! Ruined 4 liters of broth, put two halves of lemon in 4 liters, not 200 ml, now it is sour

We take 200 ml from the broth. and place in a saucepan.
Squeeze the lemon and lime juice into the broth. Put the peel of the lemon and lime in the broth as well.
I can't even imagine what would happen if, according to the recipe, 200 ml squeezed out two halves of citrus
Can someone tell me if you can fix this?

Well, they staged a direct manifestation, with emotions and gratitude in support of "freedom to Yuri ..." Even those who have nothing to do with this

And the broth turns out to be excellent, slightly sour, and goes well with peas and vegetables.
If the broth is sour, take a small amount and dilute it with pure vegetable broth, you get a slight concentration of acid and will be fine.
I usually always taste the sample before using the whole amount.

Support? In what?
If help was provided to get out of the situation, I can understand such help. Such help could be provided in plain text, here in the topic with normal text, perhaps someone else could join and help.
Okay, let's go. Otherwise, now a bunch of small things will fall into the topic))

And I usually trust your recipes, so it didn't even occur to me that by reducing the acid concentration by 20 times, I could ruin the broth. It is her own fault, you need to think with your head (it was only later that I presented the amount of juice from 1 whole citrus. Even if such an amount is added to a glass of tea, it will become impossible to drink).

Ira, forgive me - I didn't even imagine that a problem might arise. Perhaps I wrote the text poorly, I usually check what I wrote several times and make additions Now, after the holidays, I will check it with the source and make changes

HAPPY NEW YEAR! I hope I didn't do much harm
