What nicknames have not been given to products made from genetically modified organisms! They have been dubbed both "Frankenstein's food" and "zombie food".

In the West, many people refuse to consume foods made from GM organisms. Most European governments have declared a moratorium on the import of GM products and obliged manufacturers to label products containing these components.

In Russia, on September 1, 2002, the Resolution of the Chief State Sanitary Doctor of the Russian Federation "On the introduction of sanitary rules" (dated November 14, 2001, No. 36) came into force. This document (SanPiN 2.3.2.1078-01) contains a norm on mandatory labeling of products containing more than 5% GM components. By the way, the law obliged manufacturers to do this since 1999.

Moreover, regardless of the percentage of GM-raw materials in the product. However, the doctors could not control the implementation of this decree before the new SanPiN came into effect. - What, in your opinion, is the danger of GM products?

- There are several levels of understanding of what is the real and potential harm of GM components in general. Let me give you a simple analogy. There is a radio receiver, there is a radio amateur boy who already knows what a transistor and a resistor are, and he really wants to connect a light bulb to this radio receiver to light up a dark closet. The boy finds with a voltmeter where there is voltage, and solders a light bulb into it. The light is on, the boy is happy. But he does not think about which wavelength he will receive interference, or which station will not work. Today, scientists cannot say exactly where the genetic construct is inserted in the chain, and what changes occur in the genome during the transformation process. And the worst thing is that not fully understanding this, humanity releases GM organisms into nature. And this act is irreversible.

There is a known case when genes-modifiers of corn, which give it resistance to aluminum (this crop does not grow well in soil with a high aluminum content), were found in Mexico in places where ordinary, unmodified corn grew. That is, these genes have given GM corn such a selective advantage that it replaces "natural", unmodified varieties.

Already now, European farmers say that they cannot guarantee the complete absence of GM components in their products.The reason for this may be the accidental ingestion of GM crops on farm fields (for example, the wind carries seeds for many hundreds of kilometers), as well as mixing of GM crops with "natural" ones during storage.

- How safe is food containing GM foods?

- The consequences of the use of GM foods are still very poorly studied, and no one can guarantee their safety for human health. As a result of the introduction of foreign genes, harmful substances can form and accumulate in GM plants. Studies of transgenic potatoes have shown that the toxin produced in its cells affected the size of internal organs in rats. In addition to toxins, gene transplant produces new proteins that can be strong allergens. So, the company "Pioneer Hi-Bred Int." engineered soybeans with Brazil nut genes in the hope that it would improve the quality of soy protein. Researchers from the University of Nebraska in an experiment found that eating such GM soy can cause severe allergic reactions in people who are allergic to Brazil nuts.

In most cases, it is impossible to predict whether a particular product will prove to be hazardous to allergy sufferers. Some people may develop sensitivity to GM foods gradually, while others may develop an allergic reaction immediately after the first meal.

- Some scientists believe that as a result of the escalation in the number of GM crops, the genes that are responsible for low sensitivity to antibiotics traditional for medicine and veterinary medicine may be transferred to humans. Do you share these concerns?

- In nature, there is a "horizontal" gene transfer (when genes are not transferred from mother to child, not from ancestor to offspring, but between two unrelated organisms). It is theoretically possible that genes, including genes for antibiotic resistance, will pass from plants to microorganisms, from microorganisms to some other higher organism, or directly from microorganisms to humans. And even the spread of these antibiotic resistance genes and in the microflora can lead to unpleasant consequences.

- You are now taking part in a project that the Institute of Cytology of the Russian Academy of Sciences is implementing jointly with the international organization Greenpeace. What tasks is it intended to solve?

- Before introducing the labeling of goods and products containing GM components, it is necessary to define what we can call “GM-free products”. We are now developing the standard for such "clean" products. The hardest part here is to understand what we will call GM-free products, because you can determine the concentration at the level of 0.5% and even 0.05%.

That is, there is a "level of detection" by the research method. And we can only say that this product does not contain GM components at the detection level. One millionth of a percent can be, because the same mills grind flour from modified and normal soybeans. Naturally, some kind of impurity, pollution is always there. It is important to understand which impurity is significant.

Such a test will cost the manufacturer inexpensively, and already now many large stores and restaurants are showing interest in this. They are interested in promoting their product as environmentally friendly. The development of a standard for products "free" from GM components, in which we participate, is the first step towards the creation of a GM control system, which will not appear very soon.

- How can we navigate the goods offered to us until the standard of "GM-purity" has been developed, and the corresponding inscriptions have not appeared on the packaging of the products? Many experts advise avoiding foods that contain soy. Are their fears fair?

- According to various estimates, from 30 to 60% of all soybeans on the world market are genetically modified.When buying a product containing soy flour, be it sausage or baby food, we cannot be sure that the manufacturer purchased unmodified flour, because Russia does not even have separate customs codes, a separate classification for GM products. The manufacturer often does not know himself that he is being sold genetically modified raw materials.

Genetically modified foods: quiet takeover of the Russian market

What are genetically modified organisms, what danger to human health can be posed by the use of GM crops in food, is it possible to trust what we eat and what human intervention in the genetic apparatus of plants can turn out to be a boon or a catastrophe - these are the questions that are being asked today by scientists both in Russia and in the world.

According to the doctor of biological sciences, an employee of the Institute of Plant Physiology. Timiryazev Vladimir Kuznetsov, the most important thing is to determine to what extent products containing GM organisms are dangerous to human health.

"The whole problem is that the technologies for producing GM organisms are imperfect. A genetic engineer today can take a fragment from a mouse or fish and insert it into a specific place in the plant's genome," says the scientist.

“And just imagine,” Kuznetsov continues, “that a small program is being introduced into a gigantic program that determines the entire life of a plant! This can lead to serious disruptions in the process of plant development, and we do not know how a person who uses it will react to this genetically modified plant. for food ".

The creators of the "night pearl", as they dubbed the fish, assure that it is completely safe, incapable of reproduction, and its fluorescent glow is harmless to those who look at it.

However, if the British are ready to treat an outlandish pet with complacency and take it as a fashion accessory, then the inhabitants of Britain, and indeed Europe in general, look at the consumption of genetically modified food products.

Europeans stubbornly refuse to consume GM food, fearing that it is unsafe for health. Although some products containing genetically modified plants are still imported into Europe, at the end of 2002 the European Union issued a four-year ban on new GM crops. In addition, products made with GM components should already be labeled in European stores.

All this causes considerable irritation in the United States, which is the largest producer of GM products.
Squeezing out of the market

However, if the European consumer can control what exactly he buys in the store and, if desired, ignore GM products, then in Russia it seems that the buyer does not yet have this opportunity. And this is also a cause for concern for scientists.

"The Russian market is literally squeezing out normal food products with products containing GM organisms, and in most cases the consumer is not even aware of what he is buying," says Kuznetsov. "That is, the elementary human right to know what he eats is being violated."

"The problem is solved in an elementary way: all products with GM organisms must be labeled, that is, the packaging must be written: this product contains components of genetically modified organisms. Then each customer will know exactly what kind of food he is eating," the scientist said.

One of the main arguments of American scientists involved in the creation of genetically modified crops is the direct economic benefit to agriculture.

The use of GM plants can allow farmers not only to increase their production, but also to significantly reduce the use of pesticides. For example, according to American scientists, growing cotton obtained using biotechnology requires 40% less pesticides than usual.

However, as Russian experts say, in a sense, the use of chemical plant protection products is safer than genetically modified organisms.

American manufacturers of genetically modified food, despite the ban on the use of their technology in most countries of the world, until recently in their homeland felt extremely at ease thanks to good connections in power structures. They even managed to ban the labeling of GM products and thus deprive Americans of choice. However, last week, the producers of the so-called "Frankenstein food" received a real stab in the back: residents of one of the counties of California voted overwhelmingly against the use of biotechnology in agriculture in their administrative unit. Of course, this does not mean the emergence of any active opposition to GM products throughout the country. American propaganda is working well so far, and most Americans still believe that the rest of the world’s protest against GM products is caused solely by the fact that people in other countries simply from “anti-Americanism” do not want to eat what Monsanto and Washington recommend to them. However, these illusions are unlikely to last long. In February, a group of American scientists published a report that in 50 years there will be no "natural" living organism left on the American continent - all living things will be genetically modified. In this regard, scientists call on Europe, Russia and all other countries where these technologies are not yet widespread, to categorically prohibit all gene development. According to them, now it is not so much human health that is under threat as the survival of our entire biosphere.

In order to be convinced of this, it is enough just to walk along the streets of any city in America. According to the data obtained, almost every fifth man can be classified as "burly", the same number are obese, two-thirds of women have a pear-shaped figure, and most of the fair sex in the United States today simply would not fit into sizes that have long been considered standard ... Already, Americans are experiencing long-term consequences - a huge number of obese people. In America itself, along with the usual "negative" position, critical views on the consumption of completely untested GM foods are also beginning to appear. “There is absolutely no connection between eating genetically modified foods and being overweight among our citizens. There is no reliable control system for the use of GMO in Russia

In Russia, European standards for transgenic products are being introduced. Since Tuesday, Russia is introducing European standards for labeling food products containing genetically modified sources (GMOs).

Meanwhile, the Russian branch of Greenpeace announced the first results of the action "No transgenes on the tables of Russians!" The organization has published a list of manufacturers supplying stores with meat, fish products and confectionery, baby food and drinks with genetically modified ingredients. There are 129 enterprises in this list. However, experts believe that buyers still do not fully know what they are eating.

Scientists still have not come to unequivocal conclusions about whether genetically modified foods are harmful to human health. Thus, the president of the National Association for Genetic Safety, Alexander Baranov, declares that the use of such products is a "time bomb". The consequences may not affect the consumers themselves, but their children.

"Transgenic products are when, in fact, a foreign gene is introduced into the system of correlated (linked) traits and disrupts the balanced system," explains Alexander Baranov.- Changes in the work of genes lead to the appearance of completely wild and never previously encountered in nature. It's like the American chicken story. They were fed hormonal supplements and said that these supplements are absolutely harmless, and then it turned out that the hormones did not work on the people who ate the meat of these chickens, but they hit the children who were carried in the womb. The children were born as if normal, but when they reached the reproductive age - 12 years old, when the hormonal system turned on and worked intensively, the "chicken hormones", which were silent for the time being, also turned on. This is where all these trapezoidal bodies, obese people came from. "

On June 1, Russia introduced European standards for labeling food products containing GMI - now the label must indicate the presence of more than 0.9% of transgenic components.

However, the size of fines for violation of the order of the chief sanitary doctor of the Russian Federation Gennady Onishchenko is ridiculously small: from 100 to 20,000 rubles.

Independent environmentalists and representatives of the Confederation of Consumer Societies (ConfOP) doubt that all manufacturers will comply with these guidelines. Many of them did not label their products even with more lenient requirements (from September 1, 2002, products with a GMI content of 5% or more had to be labeled in Russia). Moreover, in Russia there are no methods and equipment for the objective analysis of products.

"While Russia does not have a reliable control system for the use of GMI in food and for labeling," says Natalya Olefirenko, a spokesman for the Russian branch of Greenpeace, "buyers will literally not know what they are eating."

In this situation, consumers have to be content with little. The Russian branch of Greenpeace has prepared a "Handbook for the Consumer", which presents data on enterprises that manufacture products using GMI.

The directory contains three lists - "green", "orange" and "red".

The "green" list includes companies that have given written guarantees that they will not use GM components. In "orange" - companies that used the GMI out of ignorance, but are ready to give up this practice. In "red" - manufacturers who use GMI and are not going to abandon them, or companies that have not provided any information about themselves.

The Greens sent out questionnaires to over 1000 enterprises. However, the overwhelming majority of manufacturers ignored the request of environmentalists. As a result, a total of 314 companies were included in the list.

129 companies were included in "red". Among them: JSC "Ice-Fili", LLC "Company from Palycha", CJSC "Mikoyanovsky meat-packing plant", JSC "Mosagroprom", LLC "Ochakovo-16", CJSC "Rublevskie sausages and delicacies", CJSC "Russian sausage house", OJSC Russkoe Bistro, OJSC MPZ Tagansky, LLC Talosto-products, OJSC Cherkizovsky MPZ, confectionery factories OJSC Bolshevik and Udarnitsa, experimental confectionery and bakery plant Zvezdny.

However, according to experts, this list cannot be called objective. For example, the "green" list (173 companies) includes "Daria" LLC, although back in January the "green" ones found GM components in the dumplings of this company.

The name of the confectionery factory "Udarnitsa" is on both the "green" and "red" lists.

"The lists reflect only the companies' GM policies, but do not guarantee the presence or absence of GM in specific products manufactured by those companies," Greenpeace said.

Alexander Baranov, President of the National Association for Genetic Safety, doubts the objectivity of the guide. "The very idea of ​​compiling such a guide is laudable. But I doubt all the manufacturers told the truth," he said.

In the course of the laboratory examination carried out by the Institute of Nutrition of the Russian Academy of Medical Sciences and Greenpeace, only products from 12 manufacturers that are included in the "orange" list were tested.

This list includes "Bogatyr" Sausage Factory, "CampoMos" plant, "Tsaritsyno", Tushino meat processing plant, "Baby Food" Istra-Nutricia LLC, "Kolinska" company - Baby cereals (Poland).

But even the "orange" have complaints about the compilers of the directory. So, representatives of OOO "Meat Processing Plant" CampoMos "reported that they independently sent the plant's products to one of the French laboratories, whose specialists found only hundredths of a percent of GMI in the samples presented.

In response to the accusation, Greenpeace employees suggested that products made from a different batch of raw materials were sent to France for examination.

The method of creating GMI is to change the genetic structure of plants in such a way that they acquire new properties: they become less susceptible to pests, diseases, or acquire resistance to drought and cold weather.

Transgenes can now be found in sausages, pates, chips, baby food, chocolate and soda. In most of these products, the transgenic protein is 70-80%.

According to the World Health Organization (WHO), in order to check the safety of GMI, it is necessary to analyze the toxicity, allergenicity, and stability of the structure of such products.

One of the studies was carried out in the UK by Dr. Pusztai, and the other in Russia, at the Institute of Nutrition of the Russian Academy of Medical Sciences. The experiments were carried out on laboratory rats fed with GM potatoes. The results obtained are largely similar: in rats, the cellular structure of the stomach and liver was disturbed, the blood formula changed, the weight of the animals and the weight of their brain decreased.

However, there is no unequivocal scientific evidence of the harm or benefit of GM foods for humans so far.

However, even if these "problems" did not exist, then some scientists, in order to solve their completely different tasks, would still strive to plant biotechnology in agriculture, or, as it is fashionable to say now, genetic engineering (GM).

The essence of the GI is as follows: every plant or animal has thousands of different characteristics.For example, in plants it is the color of the leaves, the number of seeds, the amount and types of vitamins in the fruits, etc. A certain gene is responsible for each trait (Greek genos - hereditary factor). A gene represents a small chunk of a deoxyribonucleic acid (DNA) molecule and produces a specific plant or animal trait. If you remove the gene responsible for the appearance of some trait, then the trait itself will disappear. And on the contrary, if you introduce, for example, a plant, a new gene, then it will have a new quality. The modified plant is called euphoniously - transgenic, but it is more correct to call it, as it is customary from time immemorial - a mutant (Latin - modified).

The manipulation of genes, and essentially an invasion of the divine prerogative, inevitably leads to unpredictable consequences and dangerous surprises that pose a threat to plants, animals and the environment in general. Researchers who conducted experiments at the University of Michigan found that the creation of virus-resistant GI plants forces these viruses to mutate into new, more resistant and therefore more dangerous forms. Scientists in Oregon discovered that the GM microorganism Klebsiella planticola "ate" absolutely all nutrients in the soil (so far, fortunately, not on the entire planet Earth, but only at the test site). In 1997, the US Environmental Protection Agency made similar statements about the transgenic bacterium Rhizobium melitoli and so on. Alas, this list is terribly long.

Western European greens (Greenpeace, Friends of the Earth and other organizations) dubbed GI food "Frankenstein's food." Perhaps some of the readers will be jarred by this. However, even on closer examination of the dangers that "Frankenstein's food" threatens, the hero of Mary Shelley's novel will seem like a mischievous person who can only frighten preschoolers.

For example, the American company Pioneer Hi-Breed Int designed GI soy with Brazil nut genes in the hope of "improving" soy protein. Genetically engineered soy is an invention of the chemical giant Monsanto. With the help of genetic engineering, DNA particles of a petunia flower, bacteria and a virus were inserted into its gene code. None of these components have ever been part of the human diet. After many years of research, specialists at the Cornell University Pediatrics Clinic (New York) are firmly convinced that feeding children with GI soy products (even with a partial content!) In 1999, editorials in major British newspapers were devoted to the scandalous research findings of Dr. Arpad Pustai (Rowett Institute). In 1943, the Rockefeller Foundation embarked on a Green Revolution with the Mexican government. Norman Borlaf, deputy director of the Rockefeller Foundation, has indeed managed to raise wheat yields from 750 kilograms to 2.7 tons per hectare.

In 1951, Rosalind Franklin takes clear X-ray pictures of deoxyribonucleic acid. Nevertheless, genetic engineering began to develop actively in 1970, when D. Baltimore, G. Temin and S. Mizutani simultaneously discovered and isolated in its pure form reverse transcriptase - an enzyme, the use of which greatly simplified the production of copies of single genes.

This discovery allowed P. Berg and his comrades to obtain a DNA molecule that included the entire set of genes of the oncogenic virus SV40, part of the genes of the bacteriophage and one of the genes of Escherichia coli, that is, a molecule that had not previously existed in nature!

For the introduction of genes into the cell, elements of bacteria are used - plasmids. These are small DNA molecules that reside not in the nucleus of the cell, but in its cytoplasm, and are able to invade the chromosome of a foreign bacterial cell and then leave it spontaneously or under any influence, appropriating the chromosomal genes of the host cell. The plasmids then reproduce, making multiple copies.

In 1973, scientists transplant DNA from one living organism to another - Stanley Cohen and Annie Chang (Stanford University) and Herbert Boyer combine the DNA of the virus and bacteria and "create" a ring with double resistance to antibiotics - this is how genetic engineering is born as an independent discipline.

The first transgenic plant was designed in 1983. Biologists inserted into the potato DNA molecule the gene of the Thuringian bacterium that produces a protein that is fatal to the Colorado potato beetle. At that time, it was naively believed that it did not affect other living organisms.

Thanks to these discoveries, it became possible to use genetic material almost like in a children's construction set; creating organisms with programmed properties. It is quite understandable that this gave rise to tremendous enthusiasm in the scientific community. I dreamed that a new era was about to begin - the era of biotechnology, when hereditary ailments surrender, and transgenic plants and animals would rapidly raise the efficiency of agriculture and finally solve the problem of hunger in the Third World countries. However, in reality, everything turned out to be not as simple as it seemed to many then.

For example, mutant poplars grown in Germany were not supposed to bloom. Yet they bloomed, plunging their creators into deep sadness - the unplanned effect was too clearly visible. But there are also so-called "dormant" genes, the action of which may appear many years later, when it will be impossible to stop the running mechanism.

Nevertheless, GI corporations are not at all worried about such lapses and they continue to impose their ideas with the persistence of Bulgakov's Rock from Fatal Eggs. He, as you know, undertook to save the country of the Soviets from the chicken epidemic (just as corporations are now contracting to save the world from hunger due to "overpopulation").Only the August frosts saved the country of the Soviets from the invasion of the giant reptiles bred by Rock, which, alas, cannot be expected to recur.

These fears are far from overcautious - the use of a mosaic viral activator - Cauliflower Mosaic Viral promotor (CaMV) can activate normally dormant viruses in the species into which it is implanted. It is known that CaMV is embedded in almost all GI cultures. The overactivity of genes dramatically increases the causality of cancer. Scientists conducting this study require that all transgenic crops containing CaMV 35S or similar activators should not be put into production and tested in open experimental fields (bees and other insects, along with pollen, carry mutilated genes).

Nowadays, many varieties of yeast cultures are genetically modified to speed up the fermentation process in the production of beer and bread. Studies of GI yeasts, which include genes responsible for glucose processing, have shown that they accumulate the mutagenic and highly toxic substance methylglyoxal. Thus, a dangerous by-product of yeast's vital activity is found in the final food products - beer, bread, that is, in almost all products in the production of which "Western" technologies are used. The word "western" in this case must be written in quotation marks, because in the EU countries themselves, food production technologies are used "for internal consumption."

This example shows that a product obtained with the help of genetically modified organisms (bacteria, yeast cultures or plants) can undergo dangerous changes, new or already known toxins can appear in their composition.

The problem is "small" - genes, as scientific studies have shown, do not work by themselves. They communicate with other genes and change their behavior depending on their influence. That is why the outcome of "stitching" the next fragment is absolutely unpredictable, even if the action of this fragment is studied thoroughly. In particular, the experiment on the enlargement of salmon ended very amusingly. Remember the obligatory newsreel before a film in Soviet cinemas? The salmon turned out to be huge and full-bodied, it is a pity that they could not be eaten, because the meat of the "modified" fish for some reason turned out to be ... green, "ecological" color. Today, the fish farmers of the Far East are silent, engineers are silent about biotechnology, for some reason they do not show off in front of the lenses of movie cameras with GI salmon in calloused hands.

But we use it wisely, because we create plants with the properties that we really need. And nothing more.

S. KORZUN: That is, all Michurins and Lysenks are no longer relevant, there is no need to grow year after year, carefully selecting seeds, different crops? It is enough to make a small change that is not visible to the naked eye - and everything is fine?

K. SKRYABIN: Let's not hang labels, but say about breeders. Indeed, breeders have been engaged in crossing for many decades and after that carefully, for many years, they have selected those necessary properties that are needed for economic purposes. And we can speed up exactly the same process. Therefore, you are absolutely right, we are engaged in classical breeding methods, but at the modern molecular level.

S. KORZUN: Victor, tell me, from the point of view of what appears on our table, are there really any changes?

V. TUTELYAN: I would like to add right away that even the breeders who acted in the traditional way, nevertheless, in order to accelerate these events, used a lot of tricks, up to the fact that they specially irradiated plants, seed material in order to create both it is possible to have more mutations and to increase this diversity from which this search could be found. This path is difficult and long. Now modern science, the modern level of genetic engineering allows this to be greatly accelerated (irradiation is still a process of accelerating mutation, and not the implantation of an animal gene into a plant, as is done in genetic engineering).

M. ASTVATSATURYAN: But probably no one knew about this, because there was no such universal noise that we are seeing now, at least in the West.

V. TUTELYAN: Yes, they did it quietly, there were technological approaches of the relevant breeders in the relevant scientific institutions. But this is a completely different matter. Konstantin Georgievich and I are on opposite sides of the barricades. Our task, first of all, is human safety and health.

S. KORZUN: Are they provided at the current level of development of transgenic engineering?

V. TUTELYAN: Yes, absolutely.

M. ASTVATSATURIAN: What do we have on the table now? Maybe we don’t know.

V. TUTELYAN: To date, two types of transgenic plants have been registered in the Russian Federation. The first is transgenic soy. The second type is transgenic potatoes (as well as corn, tomatoes, etc. Obviously, the nutritional academic does not have all the information). Soy is insensitive to a particular herbicide, which allows it to be grown with less wastage and less pesticide use. We, doctors, are very pleased that the residual amount of pesticides in this soybeans is much less.

S. KORZUN: That is, pesticides are used, but it is more resistant to them, therefore ...

V. TUTELYAN: They are used, but in much lower concentrations, so it does not accumulate in plants. Even at these low concentrations, it kills those weeds that need to be killed. And a transgenic potato that's insensitive to the Colorado potato beetle. Let me remind you that about 50% of potatoes are losses from the Colorado potato beetle, starting somewhere (!?) From Poland to the Urals (after all, the academician's awareness and accuracy in nutrition is amazing).

K. SKRYABIN: Can I comment on this figure? Russians eat somewhere (where exactly?) 35 million tons of potatoes. This is approximately $ 7 billion. We lose about 40% of potatoes from the Colorado potato beetle (all other losses "accidentally" fell into this vague figure - from not observing the rules of storage and transportation, etc.).

V. TUTELYAN: Sorry, I added 10 percent. Maybe in some 50 areas.

K. SKRYABIN: Well, depending on the year. These are practically IMF loans that Russia receives.The entire IMF loan is consumed by the Colorado potato beetle. But even this is not scary, but scary is that they are fighting with it with the help of chemistry. Since all potatoes are grown in small plots, about 80%, you can imagine what a horror it really is! Because God knows what is often used. I do not agree with Viktor Aleksandrovich that we are on opposite sides of the barricades. I am absolutely sure that new methods of genetic engineering are needed precisely in order to preserve our environment, precisely in order to help our ecology.

S. KORZUN: Okay, but what about taste? I imagine that even the Colorado potato beetle does not eat these potatoes, which we are going to feed our listeners with.

M. ASTVATSATURYAN: He doesn't eat leaves, Seryozha!

S. KORZUN: It doesn't matter. I have my own beliefs. I have to eat what I want to eat. I go to the store, I see an absolutely even tomato, I hope that there are no transgenic ones yet. It has no taste. At the same time, the barrel-shaped, which is plucked from the garden, has a taste. In fact, if about taste?

V. TUTELYAN: You have to pay for everything. And we must understand that, as they often say, only cheese in a mousetrap is free. It is right. Of course, creating new varieties that are convenient for us, we lose something. In particular, tomatoes grown in greenhouse conditions, of course, differ from soil ones in taste. For safety - no, for the content of nutrients - no.

K. SKRYABIN: And they are not genetically engineered.

V. TUTELYAN: Yes. But, of course, they differ in some properties. But they are safe, but they can be easily brought over long distances. This is a very important problem for us. But we move away from our conversation.

S. KORZUN: And we are returning to the same potatoes. Does its taste change?

V. TUTELYAN: No. But the most important thing I want to explain. Two things. The first issue is security. We are, after all, on opposite sides of the barricades, because we are obliged, and I do this strictly, to be an order of magnitude more careful in terms of conclusions and conclusions. For example, the identity of the chemical composition. Okay? Yes indeed. A convincing fact is that potatoes grown transgenically and potatoes grown under normal conditions, using the traditional method, are identical in chemical composition down to the smallest microcomponents. Is it enough from a medical point of view? I don't think so. In Russia, we have introduced additional tests into the assessment system that have not been used all over the world. We definitely carry out whole long-term expensive multilevel experiments to study the possibility of some toxic-logical changes, the appearance of minor components, and metabolic changes. God forbid that something changes, something may appear that cannot be caught. But this will manifest itself in experiments on animals, in experiments in the study of such subtle biochemical mechanisms. This is an indispensable component of the Russian safety assessment methodology.

M. ASTVATSATURYAN: But Western varieties are also tested for allergenicity. So far we have only talked about Western things.

V. TUTELYAN: Allergenicity is special. We study it in great detail.

S. KORZUN: Are there any examples? Have you already cut the wings of Mr. Scriabin's department in this sense?

K. SKRYABIN: Yes, of course.Why am I sitting sad? Because in Russia the truth is that today the cultivation of not a single transgenic plant is allowed. I want this to be remembered very carefully.

K. SKRYABIN: We have a law that was adopted in 1996, there is an interdepartmental commission, where all interested departments are represented. And since 1997, a large number of transgenic plants have been tested. Until now, no plant can be grown in Russia. Here are generally very interesting scissors. On the one hand, doctors have shown that they are absolutely safe (in this case, soybeans and potatoes, but which "doctors" are reasonably silent), and on the other hand, we have no right to grow these potatoes in Russia, we can only buy and import.

S. KORZUN: Are the bureaucrats obscured or what?

K. SKRYABIN: No, these are not bureaucrats. This is a very long-standing controversy and we agree with this controversy. You need to have public discussions, whether you need to have transgenic plants in Russia at all or not. I am sure that scientific data today after a thorough check ... I am not talking about all plants, I am talking only about those plants that are thoroughly tested for biosafety, for environmental safety. Whether these plants are needed in Russia or not, this is a political problem. Because in Europe, in America, and now in China, there is a boom in transgenic plants. And Russia is now discussing this. We have such a rich country that we can afford to discuss for many years whether we can lose 40% of potatoes or we cannot.

S. KORZUN: The royal family in Great Britain is also discussing.

M. ASTVATSATURYAN: Prince Charles is a well-known environmentalist, he fights for maximum closeness to nature (Prince Charles has led the fight against transgenic "food" for children).

I read their report. In my opinion, the most important requirements are: firstly, 800 million people on earth are malnourished. In order to feed the developing world, to make it safe, it is imperative to check. And the most important thing, in my opinion, is to make sure that farmers in developing, poor countries avoid monopolization by leading manufacturing firms, and to do these safety studies and plant creation already, and there are a lot of them, on the basis of state institutions. Independent expertise, and the creators should be the so-called public institutions. Some documents are being formulated, and we, in fact, are now talking at the international level.

S. KORZUN: I foresee objections. All the promotion is due to the fact that the Americans who were the first to embark on this path have too much money.

K. SKRYABIN: This is not true.

M. ASTVATSATURYAN: By the way, were they the first to enter?

K. SKRYABIN: This is not true. I have to say that the question for the ricochet is incorrectly asked, because not just genetically modified plants, but genetically modified plants that are thoroughly tested for safety and registered by government agencies. This is what Academician Tutelian was talking about in the case of food. Here all the time there is confusion of concepts. There are many different genetically modified plants that are studied in laboratories. Nobody offers to sow them on the fields, it is forbidden, and in Russia too. We are talking only about those plants that have passed the most thorough inspection (all "thorough" inspection is reduced only in the "approvals" or in the "disapproval" of the nutrition official).

S. KORZUN: And the checks are contradictory. Here Marina slipped me magazines, I read. Horror! There is no effect in the fields, but in the laboratory, butterflies or caterpillars die. It is assumed that if rats require long-term consequences in a year, then for a person it is 10 years.

K. SKRYABIN: In each case, you need to look at the source. Unfortunately, journalists have a big problem here. There is one last example, which is related to bees. One very nice scientist in Germany has been studying bees for a long time and persistently. By the way, he told reporters that they are studying how bees behave on transgenic plants. Moreover, these bees never live on these plants in nature. But then the noise started. The scientist said, "I didn't say that."

M. ASTVATSATURYAN: No, this scientist said that “I did not make long-term forecasts, and I did not say that it was bad”. “This is a very rare event,” said the same scientist.

The introduction of nitrates into the soil is accompanied by their accumulation in the pulp of the plant. Lack of sun and an abundance of moisture contribute to the accumulation of nitrates. Nitrates themselves are not very toxic, but they are precursors of N-nitroso compounds that have the ability to cause cancer and nitrites. The conversion of nitrates to nitrites occurs in the gastrointestinal tract with the participation of microflora. Some more of them enter the body ready-made: some of the nitrates already in the watermelon are converted into nitrite, which is facilitated by high humidity. With an increase in the shelf life, the content of nitrites in watermelon increases several times. Nitrites, unlike nitrates, are toxic compounds. They disrupt the transport function of blood, affecting hemoglobin - the oxygen carrier to tissues. Hypoxia occurs - oxygen starvation of tissues, which is especially difficult for children, as well as those who suffer from diseases of the cardiovascular, respiratory, excretory systems.
Cleanliness is the key to health
Often we ourselves are the cause of the unpleasant consequences of eating watermelons. Particles of soil, dust, and various microorganisms remain on the peel of a watermelon, therefore, a poorly washed fruit can cause an intestinal infection. You should not buy watermelons with damaged rind or already cut. Bacteria multiply rapidly on the sweet surface of the damaged fruit in the presence of air (even a small wound is enough), and when eating such a watermelon, gastrointestinal disorders may occur. Poor quality watermelon can cause gastrointestinal upset. The time of their appearance ranges from 1-2 hours to 1-2 days after consuming the product. The younger the child is, the earlier they can occur. External manifestations of disorders: weakness, lethargy, headache, fever, paroxysmal abdominal pain, nausea, vomiting, upset stools, which can lead to dehydration.

Depending on the amount of a harmful agent that has entered the body, on age and individual resistance, the disease can proceed in different forms.

In a mild form, weakness, lethargy, nausea, 1-2 times vomiting and (or) 1-2 times liquefied stools are observed. Severe disorders in the work of organs and systems are accompanied by pronounced weakness, headache, high fever, repeated vomiting and liquefied stools, leading to dehydration.

The child needs help before the doctor arrives. The main goal is to give the baby as much water as possible and thereby reduce the manifestations of the disease. Frequent fractional drinking is necessary. When vomiting, the child is drunk with a teaspoon and even a pipette.It is better to add REGYDRON, GASTROLIT, ENTERODEZ to your drink - specialized formulations to restore the loss of not only liquid, but also salts.
