Hellyy
Dear bakers!
I have been using the bread maker for a long time. I love the way it works. But here's the bad luck. Help me. My bread maker came with a recipe book as a gift, but when I moved to another place of residence, it got lost. Maybe someone has such a book in a scanned version, or maybe someone will take a picture of it for me, so such cool recipes, where can I find them now. Please RESPOND, HELP !!!!!!!
SergeiK
Hellyy, I will send the link to the PM! These are scans from the user pssergey, which he shared with me at one time. Please write, did you have the same version of the book?

Binaton - easy to operate, good bread maker

To get it, we start from here to master the basics of baking "The bread did not work out again, I did everything strictly according to the recipe. What could be the matter?" https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=146942.0

Describe in more detail?

The stove is really good, despite minor flaws in my copy, it has worked for more than 1.5 years, ugh, ugh, ugh ... so as not to jinx it At first, there were also dances with tambourines, and now everything is debugged, universal the recipe was found and tested repeatedly, from different flours ... True, in the oven, I just knead the dough now, and bake it in the gas oven. In the oven, a denser bread is obtained ... The main thing in this process is that the flour and yeast are of high quality. The most beautiful crust is obtained if you grease the top with fermented milk products - kefir, fermented baked milk ... Bread is better to lie down / rest for at least a day, otherwise it leaves instantly. If the bread stale, I put it in the refrigerator, there has never been a case of moldy, unlike the store one ...
Write what I can - I will help.

gleb_2000
thank you for your responsiveness, this is my first forum, it is impossible to send personal messages, problems - the bread does not come up, you put more yeast, the smell of yeast in the bread remains ... me .... what delicious recipes are there for it, I really want to learn how to bake bread to taste like lavash or Uzbek flatbread, help who knows)))
Sandy
I use this yeast

Bread maker Binatone BM 2068

Plain white bread
1 glass (from a bread machine) water
3 cups flour (sift)
2 tbsp. tablespoons (from HP) sunflower oil
1 tbsp. spoonful of sugar
1 tsp salt
1h l. yeast

Look at the kolobok, since the flour is different for everyone, you may need to add a little flour or a little liquid.
Mode 1 - Basic.
Loaf - 750 gr.
The crust is medium or dark.

Do not take out the bread right away (but turn off the heating) for 10 minutes, let it stand, then the spatula remains in the bucket, and not in the bread.
It is necessary to cut the bread not earlier than in an hour, it is still "cooked up" while it cools down.
Good luck

In general, we have a very successful book with recipes, according to which all breads are obtained, but you need to keep an eye on the bun, especially if you change the flour manufacturer.

The gingerbread man should be like this (a photo from my other HP, but the koloboks are the same) next time, if necessary, I will take pictures from Binatoshi.

thank you very much, only the book did not work
Sandy
If HP is the first, then it is quite possible, and HP is not to blame, but simply the lack of experience in baking bread in a bread machine. Everything will come with time, there will be beautiful and tasty bread
For self-study, read the topic that Admin advised, it will not be superfluous.

Itself did not do with pressed, but I think that six - seven grams.

Fresh yeast is used for bread wheat dough at the rate of 2 grams per 100 grams of flour.
For wheat rye bread, increase the amount of yeast to about 2.5 grams per 100 grams of total flour weight.
SergeiK
Judging by the photo, you really have a problem with yeast, check them first, especially if you use pressed ones, the shelf life is important ... For 600 grams of flour - I took ~ 10 grams of this. The main thing is that the yeast is fresh ... Do not forget to store it in the refrigerator.
SergeiK
For Admin - I am not a supporter of a large amount of yeast, 1 tsp is enough for 600 g of flour. - either fast or steamed ... A matter of taste ...

Of course, it is normal, it maintains and regulates the temperature, everything clinks and multicooker and pressure cooker and bread machine.

Baked here according to this recipe
https://Mcooker-enn.tomathouse.com/in...on=com_smf&topic=209692.0

But I decided for myself that it is better to knead it by hand, and then bake it on the "Baking" program for about 1 hour and 50 minutes.
Readiness is checked with a wooden stick, if the dry cake comes out ready.

Curd did not bake

That's just the dough you have cool

For a soft dough, you need:
- flour 450 grams
- water (liquid) approx. 300-315 ml.

You even have about 250 ml of oil. This is not enough! Therefore, the bucket creaks, with an effort to steep dough.

For guidance, look at the topic Amount of flour and other ingredients for making bread of various sizes https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=1625.0 and be sure to observe the flour / liquid balance rule
gleb_2000
"bucket creaks" - and in what specific place does it creak, the reason for the creak and how dangerous is it for health?
Sandy
1 glass of water and 3 glasses of flour + butter is not enough, the dough is not steep, I showed a photo of a kolobok. What kind of bread according to this recipe turns out also there is a photo. The proportions are taken from the recipe book.
If you got a cooler bun, you needed to add water.
The oven kneads and cooler the dough on dumplings and does not creak.
Measure with glasses from a bread machine.
Admin

1 glass of water and 3 glasses of flour + butter is not enough, the dough is not steep,

If the glass is 240-250 ml. + 3 tbsp. l. oil (45 ml.) = 290-300 ml. liquid, it may be normal.

But, gleb_2000 writes about 200 ml. water (see above), which is less than 50 ml. water = this is already a tough dough

In each case, you need to monitor the consistency of the dough, crumb, flour / liquid balance, and this balance depends on our personal mixing conditions, flour quality and ingredients.
Sandy
I agree to all 100
And I also noticed flour depending on how it was once baked from flour from another manufacturer, so I had to add another 1 tablespoon (from HP) of water, one takes more water and the other less.
gleb_2000 the most important thing is the correct bun, and not the amount of grams of flour. In the process of kneading, you need to navigate, or add flour or water.

Dear Admin, I am more worried now not for the dough, but for the creak, but it is only dangerous to health and why the bucket creaked and in what place, I just want to check if there is any damage there that could lead to HP failure, tell us what do you know, henceforth I solemnly swear not to rape xp and follow your recommendations))
Admin

And you try to make the dough much softer, and compare at what steepness the bucket squeaks more - and you will find out the result.

Sorry, I have a different model, but the problem is urgent. That is, today there is no longer any problem, KP ordered to live long. This is exactly how it all started, I tried to add oil (where the mechanism is spinning). Over time, the creak became more frequent, but today, EVERYTHING! In short, the motor runs, but nothing spins, even without a paddle. I'm waiting for my husband, let him dig deeper, but after all, nothing is eternal! Here, just looking after an expensive one (I do not bake in HP, only in the oven) for kneading dough.
