Ingredients

Flour 1 kg
Water

Cooking method

  • Coeff. 0.5
  • 500 flour
  • 7.5 yeast
  • 10 gr. Salt
  • 335 water + enough to get a soft consistency
  • The flour is mixed with water for 5 minutes at 1 speed. Leave the dough to swell for 15 minutes. Then add salt and yeast and knead for 10 minutes on the second speed until the gluten develops moderately. Allow the dough to rest for 20 minutes and put it on the table in the form of a cake. Fold the cake three times, bending the edges from the sides. Then fold the resulting dough strip in three times, bending the edges above and below. Cover the dough and leave to ferment for 40 minutes. Then the dough is divided into portions, rounded and the pieces are pre-proofed for 30 minutes under a towel. Form the bread, give it 1 hour 30 minutes of proofing and bake on a hearth with steam at 465F for about 30 minutes. ... Total cooking time = 3.5 hours.

The loaves are simply unusually airy and tasty. Baked in baguette forms, so the loaves stuck together
