Ingredients

Pike perch fillet 0.5KG
Unsalted lard
or fatty pork
125-170 g
Loaf soaked in water 165-220 g
Bulb 1 PC.
Garlic 2-3 cloves
Powdered milk 3 tbsp. l.
with a slide
Egg 1 PC.
Ground black salt and pepper taste

Cooking method

  • Pass the pike perch fillet through a meat grinder along with unsalted bacon, a stale bun soaked in water, onions and garlic. I deliberately, when I come across fatty pork, cut off the fat and put it in the freezer, then use it in fish cakes. I take lard about 1/4 - 1/3 of the weight of the fish, rolls are also about 1/4 - 1/3 of the weight of fish with lard.
  • Thus, although I always do it "by eye", the following proportions are obtained.
  • Why is there such a spread in fillers? And because pike perch is different: there are 2-2.5 kg, and there are fools and from five kg. weight, the meat is tougher, respectively, and more lard buns
  • I strongly recommend trying this way: do not soak the roll in milk, but add milk powder to the minced meat
  • Stir the minced meat well so that it falls behind the hands, if necessary dilute with water in which the bun was soaked so that it is fluffy. No need to beat back - the fish is a delicate substance !!
  • Form patties with a damp hand, roll in breadcrumbs mixed in half with flour and fry in half-hot butter with vegetable oil! And in the oven for literally 5 minutes
