Ingredients

For the test:
Flour 2 tbsp.
Sugar 1.75 st.
Refined vegetable oil 1 tbsp.
Carrot,

Chopped walnuts 1 tbsp.
Coconut flakes 1 tbsp.
Raisins 2/3 st.
Grated nutmeg 1 tbsp. l.
Cinnamon 1 tbsp. l.
Carnation pinch
Salt 1/2 tsp
Baking powder 4 tsp
Baking soda 2 tsp
For the cream:
Cottage cheese 300 g
Softened butter 100 g
Powdered sugar 2/3 st.

Cooking method

  • Combine flour, nutmeg, cinnamon, cloves, salt, baking powder, baking soda in a bowl and stir. In a larger bowl, combine carrots, sugar, eggs, vegetable oil and stir. Add walnuts, raisins, coconut and stir. Then add the flour and spice mixture and stir again until smooth. Transfer the dough to a pre-oiled 26 cm diameter pan and bake in a preheated oven at 170 for about 50-60 minutes. Check with a toothpick, if dry, then ready. Let the cake stand for about 20 minutes and can be removed.
  • Rub the cheese, butter and icing sugar well with a spoon or silicone spatula until smooth. Cream a fully chilled cake and serve

Piano, I do it strictly according to the recipe, you don't feel baking soda and baking powder, you need to chop the carrots with knives in a food processor, just cut into large pieces (into 3-5 pieces, depending on the size of the carrot). The volume of the pie is quite large, the form needs a large, well, or slightly smaller ...

In my family, even a large pie ends up very quickly.I have a large electric oven with convection and a very large round frying pan (almost for the entire baking sheet) so it bakes evenly and rather quickly, in principle, instead of Philadelphia, you can also sour cream with sugar, so to speak, a lightweight version + under sour cream it only becomes tastier the next day ...
If the oven is large, you can try to bake on a baking sheet (if you cover it with parchment), the shape is not important here.

It was somewhat inconvenient to work by measuring everything with glasses, so for those who use weights, I will give some recalculation-overweight:
Flour 2st * 160g = 320g
Sugar 1.75st * 200g = 350g
Carrots 3.5st-about 600g
Chopped nuts 1st-140g raw peeled
Instead of coconut flakes I took 30g of wheat bran, Oksana, I just don't know if coconut flakes are sold by weight, well, in general, without it.
Raisins 2 / 3st = 100g
I was afraid to put 1 tbsp of nutmeg. l., put 0.5 tsp., you can try more, does not hit the senses.
Baking powder instead of 4 tsp. - put 1 sachet of 12g, decided that this was more than enough, but at the last moment she lost her heart and added 1 hour. l. (instead of 2) soda. Here I was glad that I stopped, because there is no more need.
The rest is as in the recipe.
The Philadelphia cheese seemed very salty to me, I thought that I would ruin the whole cake, but, oddly enough, when you eat, the salt is not felt at all. Although, there is a desire to try Mascarpone in this role.
In general, everything is fine, delight and gratitude from all my household !!!

I also forgot to write that I used a form measuring 25x30 cm, I didn’t risk it in a round 26 cm, it seemed like a lot of dough for her, she didn’t know if the rise would be strong. The cake in the form has risen by about 1.5-2 cm, but, given the large area of ​​the form, it turned out to be very fluffy and light anyway.
