Bagels for 6 kopecks

Ingredients

flour 1 s 500 g
pressed yeast 20 g
salt 5 g
sugar 15 g
margarine or butter 90 g
water 280 g

Cooking method

  • I remember exactly that the recipe of Lyudmila Marianna-yeah. But I can't find the link. I will give the recipe in the form that I printed on a piece of paper
  • Dilute yeast with water, add sugar and a teaspoon of flour. Stir and leave for 10-15 minutes. (a hat should appear)
  • Then add butter, flour and salt. Knead the dough and place in a warm place (35-40 * C) for two hours or until the dough has increased in volume by 4-5 times.
  • Place the dough on a floured surface and divide into 12 balls. Leave them on for 5-10 minutes.
  • Then roll each ball into a long strip - tongue (width about 10 cm, length 20-25). Grease the strips with vegetable oil or melted butter and roll into a bagel.
  • Put on a baking sheet. Allow to rise for 30 minutes in a warm oven with high humidity. Sprinkle with water and bake at 160-180 * C 15-20 minutes with abundant steam
  • I counted the recipe for a smaller amount of flour. And of course, the process itself has changed somewhat. It turned out like this:
  • Flour (1s + w / s) - 300 g
  • yeast - 8 g
  • kefir + water - 180 g
  • sugar - 1 tbsp. l.
  • oil pods. - 1 tbsp. l.
  • mayonnaise - 1 tsp
  • salt - 1 tsp.
  • I put yeast, liquid and sugar in a bucket of HP, + 1 tbsp. l. flour. Left for 15 minutes.
  • Then I added flour. Program "dough" (I have 1 hour 30 minutes, of which 1 hour is a rise). In the middle of the batch, I added salt and after a couple of minutes butter + mayonnaise (mayonnaise in this case, due to the fact that I did not have margarine at home, and the drain.the butter was only homemade, I don't really like it in baking)
  • After the end of the program, put the dough on the table, divided into 6 balls, after 5 minutes. rolled out tongues slightly smaller than in the original recipe, smeared with a couple of drops of sunflower oil. The proofing was right on the baking sheet in the kitchen - I just covered it with a towel, and then sprinkled it with water - and baked it in a well-heated oven without extra. steam humidification

There is one difference in these recipes: in the recipe at the link, the rolled dough into a cake is not greased before rolling into a bagel with butter or vegetable oil. And this is very important, because if this is not done there will not be that wonderful feature of the bagels "for 6 kopecks" - the crumb of these bagels easily stratified into curls (I remember this since 1977, I was 5 years old). At least they baked them in Odessa.
