Ingredients

Dough:
- wheat flour 660 g
- pressed yeast 30 g
- butter 50 g
- water with 1 egg 350 ml
- sugar (+ a little vanilla) 150 g
- salt 10 g

Streusel:
- wheat flour 60 g
- butter 30 g
- sugar 60 g
______
Per layer:
- butter 170 g
- cinnamon

Cooking method

  • These sticks were born thanks to Gypsy and Leke!!!

  • Gypsy threw a link on how to unscrew them, and Leka the other day I opened my eyes to a strisel, which I did not like to do catastrophically - it turns out that it simply turns out in a blender!

  • As a result, awesome sticks-buns came out, such delicious ones I have never tasted in my life!

  • Making a puff yeast dough:

  • 1. Knead the ingredients for the dough - 1 hour proofing at 30 C, kneading and 1 hour more proofing.

  • 2. Roll the dough into a roll and refrigerate for 30 minutes.

  • 3. Prepared butter - for whom it is more convenient to smear - heat it slightly at 30% power in the microwave, but so that it does NOT turn into liquid.
  • I did not heat, but cut them off in thin layers from the chilled pack and removed these plates onto the dough with a scraper.

  • 4. We took out the dough, divided it into 2 parts, the second part was returned back to the refrigerator.

  • We are working with the first part:

  • a) rolled into a rectangle 1.5-2 cm thick and mentally we divided it vertically into 3 parts, on the left and middle parts we spread half the oil in a thin layer and sprinkle all three parts with cinnamon on top;
  • b) the middle part was covered with the right unoiled part;
  • in) now they have wrapped the left side in the middle - like they closed the book.

  • That is, we got 3 layers of dough in height.
  • All the edges were pinched so that the oil would not come out during rolling and once again rolled a little into a rectangle so that it would still be dumb.
  • So - we continue folding, but already no lubrication:

  • d) again mentally divided into 4 parts;
  • e) rolled the edges into the middle;
  • e) and finally folded in half.

  • So - the first part of the dough is ready and it goes back to the refrigerator for 30 minutes - this will just be for 1 baking sheet.

  • That is, those who do not want a lot of tasty sticks make half the norm, and those who want a lot are busy with the second part of the test.

  • 5. Streusel - mix flour, sugar and cold crushed butter in a blender.

  • 6. Take the first part of the dough out of the refrigerator and roll it out 0.5-0.7 cm thick.

  • 7. Cut vertically into 6 strips.

  • 8. Pour a lot of strusel on a cutting board, roll a strip in it, cut it inside and turn it out as in the photo from Tsygankina's Japanese link:

  • 9. Put on a baking sheet.

  • Sprinkle all the sticks on the baking sheet with the remnants of the strusel.
  • Proofing - 50 minutes at 40 C

  • My first batch stood for the first half hour at 40 C in the oven.
  • The second baking sheet was allowed to stand at room temperature for 20 minutes longer.

  • Bake for 20 minutes at 200-220 C

  • At the exit, these are the sticks:

I smeared 1 layer with butter, sprinkled with cocoa,
on top 2 layer - butter, cocoa, etc.
I linked the edges after each layer and at the end - for greater reliability, I made a rope along the linked edge (or a pigtail, I don't know, in short, like on dumplings).

I rolled it out a bit and folded it in half -> in the refrigerator.

Everything turned out much faster and even tastier
