Baguette Marigold (based on Epi baguette)

wheat flour 300g
rye flour 30g
water 330g
fresh yeast 3.3g
wheat flour 600g
rye flour 70g
chickpea flour 15g
water 350g
fresh yeast 6,7g
malt (replaced by molasses) 1h l.
salt 20g

Cooking method

Mix all ingredients until smooth. Leave at room temperature for 2 hours. Then transfer to the refrigerator, Leave at 5C, for another 10 hours.
Knead all ingredients except salt in a food processor or bread maker for 15 minutes. The dough should be well kneaded and separate from the bottom of the bowl. Then add salt and knead for another 3 minutes. Then transfer the dough to a container with a lid and transfer to the refrigerator for another 12 hours.
Place the dough on the work table before baking. Divide into parts, each 220g. Roll up and let it acclimatize for 20-30 minutes.
Then shape the dough into baguettes. Leave to proof for 90-120 minutes.
To form "magarites", the proofing should be reduced by 30 minutes.
Formation of "daisies"
We cut each baguette with scissors like epi baguettes, but cut the dough to the end. We put each cut piece on a baking sheet, thus forming a flower.

Let them sit for 30 minutes.

If we bake baguettes, then cut the baguettes and flatten them in the form of a spikelet.
We bake, preheated to 230 C. oven, 20 minutes. First 10 minutes with steam.

Tell me, please, and at what point to connect the first part, called a strange word, with the second? I can't catch up, but I really want a baguette

And in the form of a flower, my grandmother and I made pies in my childhood - it saves space, only they had to be coated with oil so that they could easily move away from each other.
