Whole Wheat Flaxseed Bread

milk 180 g
salt 1.25 tsp
sugar 1.5 tbsp. l
butter 20 g
vegetable oil 20 g
flax seeds 30 g

Cooking method

  • Dough:
  • Mix yeast with flour, add water at room temperature and knead the dough. Tighten the container with the dough with foil. Fermentation - 12-16 hours at room temperature.
  • Dough:
  • Fry flax seeds a little in a dry frying pan, cool.
  • Mix both types of flour (leave 1.5-2 tbsp of premium or 1 grade flour from the total), add warm milk and water, salt, sugar and dough, knead the dough. As soon as all the flour is evenly moistened (in a bread machine for 4-5 minutes of kneading), stop the kneading and leave the dough alone for 20-25 minutes.
  • Add butter and vegetable oil, the remaining flour to the dough. Kneading in a bread machine - 10 minutes, then add flax seeds and knead the dough for another 5-6 minutes. The dough is very soft and non-sticky.
  • Fermentation - 90 minutes with one stirring in the middle of fermentation.
  • Dust the table with flour a little. Lay out the dough, knead, roll out into a "tongue" 1 cm thick (the width of the dough layer is equal to the length of the baking dish). Roll up the long side and transfer to the baking paper-lined baking dish, seam down.
  • Proofing under the foil for 45-60 minutes until doubled.
  • Bake in an oven preheated to 230C (210C convection) degrees with steam for the first 10 minutes, then lower the temperature to 210C (190C convection) degrees and bring the bread to readiness. The total baking time depends on the oven, for me it was 45 minutes.
  • Put the finished bread on a wire rack (do not cover) and leave for at least an hour and a half.
