Eggs in beet marinade


peeled beets 250 g
water 250 ml
black currant berries 100 g
table vinegar 2-3 st. l.
salt 1 part tsp
sugar (honey) 1-2 tbsp. l.
garlic 2 cloves
star anise 1 star
cinnamon 1 stick
chili in flakes 1/2 tsp
chicken eggs 6-10 pcs.

Cooking method

  • Chop the beets into strips, add water, add salt, sugar, vinegar, spices and simmer over low heat until almost soft. Pour in mashed currants and cook until tender.
  • Grind the mass until smooth and, if necessary, bring to taste. Cool the mass.
  • Peel the hard-boiled eggs, immerse them in the marinade and refrigerate.

You can arrange something like beetroot fondue.
Mix the marinade with crème fraîche or thick sour cream. Serve chopped vegetables, cheese, croutons separately.

I want to tell about the texture of eggs.
Try not to digest them. About 8 minutes after boiling is enough to cleanse.
Under the influence of the acids in the marinade, the protein becomes denser, and the further, the more. If marinated for more than 3 days, it becomes almost rubbery.
But the yolk ... I don't even know how to describe it more appropriately ... It seems to be dry, but, dissolving with saliva, it literally diverges on the tongue ... as if spreading. A very pleasant feeling.
