Cod with Provencal vegetables


Cod fillet (on skin) 2 pieces
Green beans 2-3 handfuls
Tomatoes 2 pcs
Onion (preferably red) 1 PC
Green basil for decoration
Olive oil 3 tbsp. l.
Garlic 1-2 teeth.
Dry white wine 2 tbsp. l.
Pitted olives 5-7 pcs
Mustard ready 1 tsp
Parsley 3 vet.
Capers (optional) 1 tsp
Freshly ground black pepper taste
Salt taste

Cooking method

  • Chop parsley, garlic, capers and olives. Add mustard, olive oil, white wine (can be substituted for white wine vinegar) to the mixture and mix well. Add pepper and salt to taste.

  • Put green beans and tomatoes cut into pieces on a sheet of foil. Ideally, long green beans and cherry tomatoes are used.

  • Place the cod skin side down on the vegetables. Grease the top of the cod with sauce and lay out the onion rings.

  • Wrap the foil and bake the fish in the oven at 220 C for 20-30 minutes, depending on the thickness of the fillet.

  • Put the prepared fish on a plate with vegetables and pour over the melted juice, garnish with green basil if desired.
