Cooking method

  • I cooked lean kharcho for two reasons. First, now post. Secondly, having received today a new toy in the form of a multicooker Redmond RMC-02, I wanted to cook something immediately, but I had no beef.
  • Pour 1 tbsp into the multicooker bowl. a spoonful of vegetable oil. Chop one onion, put it in a multicooker bowl, add ketchup (I took the classic Heinz, however, it should be said that tomatoes in any form are not added to real Georgian kharcho), tkemali sauce. Fry on the "Bake" program for 15 minutes, occasionally opening the lid and stirring the contents of the bowl. Set the program "Soup. Braising", add 100 ml of boiling water, simmer for 10 minutes.
  • Pour 600 ml of boiling water from a kettle, put washed rice (I put 1.5 tablespoons, but it is quite possible to put 2 tablespoons), add salt, pepper, suneli hops, spices for kharcho soup (all spices are from me Kotanyi), sugar. Put a whole peeled onion, 2 branches of parsley and 2 branches of dill (I put them in a special grid). Set the "Stew. Soup" program for 1 hour.
  • While the soup is cooking, cook the nuts. Peel the nuts thoroughly, break them into quarters, fry (fry until the characteristic nutty smell appears), cool, grind (I kneaded them in a mortar, since I didn't want to "drive" the chopper for 3 nuts).
  • After 50 minutes, remove the onion, parsley and dill from the bowl (they can be used as desired, but not in this soup). In the multicooker bowl put garlic crushed by a press, chopped parsley and dill (you can use cilantro, but I didn't have it, and not everyone likes cilantro), chopped walnuts. Taste the soup, assess whether you need to add more spices, especially salt (add if necessary). The spices should give the soup a bright flavor.
  • Cook the soup for another 10 minutes until the end of the program. Disable the multicooker.
  • Steep the soup for at least 10 minutes before serving.

Previously, I did not add tkemali to kharcho, I did it after discussing the recipe for kharcho prepared by Lena (kubanochka). I liked the version with tkemali (as it turned out, dried plums of this variety are always put in kharcho). You can put more Tkemali.
Next time I'll try to cook it without ketchup, but only with tkemali.
For cooking kharcho, it is recommended to take round grain rice.
The soup turns out to be a little darkish, but greens and nuts always give this effect. If you want the color to be brighter, then put the greens directly into the plate when serving, and the nuts 3 minutes before the end of cooking. But the taste will not be as intense.
