Cooking method

  • As far as I understand, there are many recipes for making lobio in Georgia, since the word lobio means beans.
  • I offer one of the options for cooking beans in a slow cooker. This recipe was shared with me by an Assyrian friend who had lived in Georgia for many years, only it was about cooking beans in a saucepan on a gas stove.
  • Soak beans in hot water for 1 hour. After an hour, drain the liquid.
  • Place the beans in a saucepan and cover with cold water. Bring to a boil, simmer for 3 minutes. Drain the water.
  • Pour cold water over the beans again. Bring to a boil, simmer for 3 minutes. Drain the water.
  • Pour cold water over the beans again. Bring to a boil, simmer for 3 minutes. Drain the water.
  • Place the beans in a multicooker bowl, pour in enough water to cover the beans a little. Set the "Stew. Soup" program for 2 hours.
  • Shortly before the end of the program, in a frying pan in vegetable oil, fry finely chopped onions, grated carrots on a medium grater, diced peppers. Fry for 10 minutes. Add ketchup, salt, pepper, suneli hops. Simmer for another 5 minutes.
  • After the end of the program, drain most of the liquid from the beans, focusing on our ideas about the consistency of this dish. We transfer the fried vegetables to the multicooker bowl. Add salt and pepper to taste. Add suneli hops if necessary. Reinstall the "Stew. Soup" program. Simmer for 15 minutes.
  • Add chopped cilantro, parsley and garlic to the multicooker bowl. Simmer for another 15 minutes.
  • Let the dish brew for 10 minutes.
  • Bon Appetit!


I actually boiled 250 grams of beans. But I saved half for another dish.

And what does triple cooking for 3 minutes give?
Usually beans are soaked for 8-10 hours, and in this recipe, soaking takes very little time. During the soaking process, all harmful substances contained in the beans are removed; short-term heat treatment gives the same effect. And the water must be drained in order to remove harmful substances. With prolonged soaking, it is also recommended to drain the water a couple of times and pour it fresh.
Both soaking and short cooking will shorten the cooking time of the beans. The goal is one, but the ways to achieve it are different.
Beans boil very well, which is what is required for lobio.

Wow, what a simple recipe! Thank you Tatiana. I have not tried it in a multicooker. I usually soak beans in a thermoservice, very convenient. I also add chopped walnuts before the garlic and cilantro.
