Carrot cupcakes


Butter 130 g
Sugar 130 g
Flour 150 g
Corn starch 15 g
Eggs 3 pcs
Carrot 150 g
Nuts 50 g
Raisins 50 g
Orange zest
Spices (cinnamon, nutmeg, ginger, cadamon) 1 tsp
Baking powder 1.5 tsp.

Cooking method

  • 1. Beat the softened butter, adding sugar, until lightening.
  • 2. Add eggs one at a time, beating well after each.
  • 3. Add dry ingredients (sifted flour, starch, baking powder, spices, zest)
  • 4. First I rub the carrots on a grater, then grind it with a blender (I'm used to it and like it more than just a grater or a blender).
  • Add carrots, nuts and raisins and just stir the dough with a spatula.
  • 5. Distribute the dough into molds for 2/3 of the height and place in a preheated oven at 180 C for 20-25 minutes.
  • Fragrant and delicious cupcakes for you!
