Bring a saucepan of salted water to a boil and place the cauliflower disassembled into inflorescences in the water. Cook for 5 minutes, drain the water.

Gradually pour in the milk in a thin stream, rubbing the mixture with a whisk so that there are no lumps. Bring sauce to a simmer and reduce heat. Cook for 10 minutes. while simmering, stirring constantly until the sauce thickens. Then add salt, nutmeg and pepper to taste.

Fold the boiled cabbage into a baking dish and pour over the sauce. Sprinkle with grated cheese on top.
